Watermelon & Halloumi Salad

Watermelon and halloumi salad servred with a peanut, chilli and lime dressing. A great sharing salad for those summer months.
  • 1 bag of salad leaves
  • 1 packet of halloumi
  • 2 large slices of watermelon
  • 1/2 cucumber
  • Small handful of radishes
  • 100g of crunchy peanut butter
  • 1tsp of dried chilli flakes
  • 2 limes
  • Small handlful of coriander
  1. First make your dressing by melting the peanut butter in a pan, then add the chilli flakes and juice of one lime, mix until combined then set aside.
  2. Wash the salad leaves, pat dry with a paper towel and place onto a serving dish. Cut the cucumber in half lengthways and using a teaspoon remove the seeds, cut into 1cm chunks sprinkle over the serving dish.
  3. Cut two large slices of watermelon, trim off the hard outer shell and then remove the seeds and leave to one side cut the fruit into 1cm wide triangular pieces and place over the salad leaves. 
  4. Heat a pan and add slices of the halloumi and cook until brown on both sides, add the watermelon seeds to the pan and toast lightly until they ‘pop’. Scatter the halloumi and watermelon seeds over the rest of the salad.
  5. Very finely slice the radishes using a potato peeler so they are really whispy all over the salad,
  6. Finish with the peanut chilli dressing and sprinkle with chopped coriander. Chop the remaining lime into quarters and place around the edge of the dish for your guests to squeeze over thier portion.
