Sausage Roll Recipe

 
 
Make these easy homemade sausage rolls for a party and watch them disappear in a flash - you can never make too many! They are a fantastic snack to serve with our beetroot, mint and organic honey dip! They can be cooked well in advance but nothing 'beets' a warm sausage roll straight out of the oven. 
 
INGREDIENTS
 
  • 6 eggs
  • 6 good quality sausages
  • 3 tbsp olive oil
  • Splash whole milk
  • 1 red onion, halved & sliced as thinly as possible
  • 1 tsp demerara sugar
  • 1 tbsp balsamic vinegar
  • 3 tsp fennel seeds, crushed in pestle & mortar or Nutribullet 1 packed ready rolled, all butter puff pastry (we like Jus Rol) Plain flour, for dusting
  • Salt & pepper
RECIPE
 
  • Heat the olive oil over a medium heat and gently cook the red onion for 3 minutes.
  • Sprinkle over the sugar and drizzle in the balsamic. Cook on a medium/low heat for 15 minutes, or until the vinegar has evaporated and the onions have become sticky and luscious.
  • Stir in the crushed fennel seeds and set aside to cool.
  • Take the sausage meat out of their casing by making a long slit down one side of each sausage. In a bowl, use your hands to mix the cool onion mixture into the meat.
  • Dust a surface and roll the pastry out into a large rectangle, and the cut into two long rectangles.
  • Place a layer of the sausage filling down the middle of each of the pastry rectangles.
  • Beat the eggs together in a mug with a splash of milk, paint one side of each rectangle with the wash.
  • Fold one other side of the pastry over onto the egg washed edge. Press down with either the back of a spoon or a fork for a crimped edge, trim if necessary and cut each pastry roll into the desired size of sausage roll (tip: if you have time and space, place the uncut sausage roll into the freezer for 20 minutes; it will firm up and become easier to cut neatly).
  • Brush each sausage roll with remaining egg wash and give each a good grinding of pepper and a sprinkle of Maldon salt.
  • Preheat your oven to 180/200°C
  • Place the sausage rolls on a lined baking sheet and bake for 15- 20 minutes, or until beautifully golden. (tip: for extra golden sausage rolls, give them another egg wash half way though cooking)
